Product detailed description
SUNCRAFT SENZO FINEST Bunka 160 mm
Premium Japanese kitchen knife with an SPG STRIX® powder-steel core, a hardness of 65 HRC and a precise K-Tip point for vegetables, meat, fish and delicate detail work.
SUNCRAFT SENZO FINEST SPG STRIX® Bunka 160 mm is a compact, universal kitchen knife for customers who want to combine the versatility of a Santoku with the distinctive and precise K-Tip point. It performs well when cutting vegetables, portioning boneless meat and fish, chopping herbs and carrying out delicate trimming work.
At the heart of the three-layer blade is modern SPG STRIX® powder steel, reaching a hardness of approximately 65 HRC. This very hard core allows an exceptionally fine edge to be created and retains high cutting performance for a long time when used correctly.
The blade is complemented by a dark finish inspired by Kurouchi and a distinctive hammered Tsuchime texture. The octagonal handle made from laminated Pakka wood with a pattern resembling Zebrawood provides natural control with both a standard grip and a pinch grip.

Why choose a Bunka knife?
One knife for most kitchen tasks
The Bunka handles vegetables, fruit, herbs, boneless meat and fish. Its 160 mm length provides good control while still offering enough working space for everyday food preparation.
Precise K-Tip point
The pronounced point helps with delicate cuts, scoring ingredients, removing membranes and working in places the wider section of the blade cannot reach.
SPG STRIX® powder steel
The very hard cutting core allows a fine edge geometry to be created and offers long-lasting sharpness. The knife is suitable for cooks who prefer high cutting performance and precise cuts.
Octagonal handle for right- and left-handed users
The symmetrical octagonal shape is comfortable in either hand and supports precise blade control with both a conventional and professional pinch grip.
What is the 160 mm Bunka suitable for?
| Use | What the Bunka shape offers |
|---|---|
| Vegetables and fruit | The wider blade makes fast cutting and transferring prepared ingredients easier. |
| Boneless meat | The sharp core enables clean portioning and precise trimming. |
| Fish | The K-Tip point assists when portioning fillets and performing delicate work around the skin. |
| Herbs | The sharp blade cuts herbs cleanly and reduces crushing. |
| Detail work | The pronounced point enables precise scoring and trimming of ingredients. |
High hardness requires correct handling
A hardness of 65 HRC provides excellent edge retention but also requires careful handling. Do not use the knife on bones, joints, hard stones or frozen food. Do not pry or twist the blade in the ingredient, and protect it from being dropped.
SPG STRIX® powder-steel blade
SPG STRIX® is a premium stainless powder steel intended for the production of high-performance cutting tools. Its fine and uniform structure allows an exceptionally fine edge to be ground and supports long service life.
The cutting core forms part of a three-layer construction. The outer layers protect the hard core and contribute to the toughness of the entire blade. A hardness of approximately 65 HRC places this model among knives intended for more experienced home cooks and professionals who appreciate high precision.
Kurouchi-inspired appearance and hammered Tsuchime finish
The dark upper section of the blade gives the knife a striking appearance inspired by traditional Kurouchi finishing. The hammered Tsuchime texture creates a characteristic pattern on every knife and may reduce full contact between some cut ingredients and the blade surface.
The decorative finish is not a substitute for proper maintenance. After use, wash the knife by hand, dry it immediately and do not leave it in prolonged contact with water, salt or acidic foods.
Octagonal Pakka wood handle
The Asian-style handle is made from laminated Pakka wood with contrasting grain resembling Zebrawood. Pakka wood combines the appearance of timber with improved dimensional stability and practical resistance to normal operational moisture.
The octagonal profile provides support for the fingers, facilitates control of the blade direction and is suitable for right- and left-handed users. Thanks to the compact knife length, it is also comfortable for users with smaller hands.

How to use the knife correctly
- Use a wooden, high-quality plastic or synthetic rubber cutting board.
- Cut with a smooth motion and do not apply unnecessarily high pressure.
- Do not twist or pry the blade in hard ingredients.
- Transfer chopped ingredients with the spine of the blade, not the edge.
- Protect the K-Tip point from lateral pressure, drops and impacts.
A suitable cutting board protects the fine edge
Hard glass, stone and ceramic surfaces dull the edge very quickly and may increase the risk of microscopic damage to hard powder steel. Choose from cutting boards suitable for high-quality knives.
Washing and safe storage
- Washing: hand wash only, using lukewarm water and a soft sponge.
- Drying: dry the knife thoroughly immediately after washing.
- Dishwasher: high temperatures, chemicals and impacts may damage the blade and handle.
- Storage: use a knife block, magnetic holder or suitable blade guard.
- Safety: store the knife out of the reach of children and never leave it hidden in a sink.
Do not store the knife loose among metal kitchen utensils. Suitable protection can be found in the knife sheaths and edge guards category.
How to sharpen SPG STRIX® steel
We recommend sharpening the hard powder-steel core on high-quality water sharpening stones. A medium grit of approximately #1000 is practical for routine edge restoration. A finer stone can then be used to refine the edge.
Maintain a consistent angle while sharpening, use moderate pressure and work along the entire length of the edge. Do not use a coarse steel honing rod on a very hard Japanese knife without careful consideration.
Not confident about sharpening?
Use a professional service or the Dellinger knife-sharpening course. With hard powder steel, the correct angle and controlled movement are more important than high pressure.
Premium gift packaging
The knife is supplied in an elegant, rigid gift box. It is therefore suitable as a valuable gift for an experienced home cook, a professional or an enthusiast of modern Japanese knives.

Frequently asked questions
What is the 160 mm Bunka knife suitable for?
It is suitable for vegetables, fruit, herbs, boneless meat and fish. The K-Tip point also makes precise detail cuts easier.
What is the difference between a Bunka and a Santoku?
Both knives are universal, but the Bunka has a more pronounced K-Tip point that provides greater precision when scoring and carrying out delicate work.
What is SPG STRIX® powder steel?
SPG STRIX® is a modern stainless powder steel with a fine structure that allows a very sharp and long-lasting edge to be created.
Is a hardness of 65 HRC an advantage?
Yes. The high hardness supports long-lasting retention of a fine edge. However, the knife requires careful use without prying, twisting or chopping hard materials.
Is the knife suitable for right- and left-handed users?
Yes. The symmetrical octagonal handle and double-bevel edge allow comfortable use with either hand.
Can the Bunka chop bones or frozen food?
No. The hard and fine edge is not intended for bones, joints or frozen ingredients. Use a specialised cleaver for this type of work.
Can the knife be washed in a dishwasher?
No. Wash the knife by hand in lukewarm water, use a soft sponge and dry it thoroughly immediately.
How should an SPG STRIX® knife be sharpened?
We recommend high-quality water sharpening stones, a consistent angle and moderate pressure. When you do not know the technique, use professional sharpening or a course.
