Santoku Suncraft Senzo Finest SPG STRIX® 170 mm

Universal Japanese kitchen knife with an exceptionally hard SPG STRIX® powder-steel core, a three-layer blade and a distinctive black Kurouchi surface with a hammered Tsuchime finish.

Suncraft Senzo Finest SPG STRIX® Santoku 170 mm is a primary kitchen knife for cutting vegetables, boneless meat, fish, fruit and fresh herbs. The wide blade provides plenty of room for guiding the fingers and makes it easy to transfer chopped ingredients from the cutting board.

The blade core is made from modern stainless SPG STRIX® powder steel with a hardness of approximately 65 HRC. The high hardness supports long-lasting retention of the fine edge, while the special structure of this steel allows controlled edge restoration on high-quality sharpening stones.

The octagonal handle made from laminated PakkaWood, with a grain inspired by Zebrawood, offers a natural grip for right- and left-handed users. The knife is supplied in an elegant gift box.

Knife care

  • Protect the edge from contact with other metal objects.
  • Store the knife in a block, on a suitable magnetic holder or in a protective sheath.

How should the Santoku be sharpened?

To restore the edge, we recommend high-quality water sharpening stones. For routine sharpening, you can begin with a grit of approximately JIS #1000 and continue with a finer stone around JIS #3000 to #6000.

Because of the hardness of approximately 65 HRC, we do not recommend careless use of a coarse steel honing rod or an aggressive pull-through sharpener. Use light pressure and maintain a consistent angle while sharpening.

A hard edge requires careful handling

High hardness extends edge retention, but impact against a bone, a fall or lateral pressure may cause chipping. Use the knife exclusively for cutting suitable foods.
