Santoku Suncraft VG-10 Black Damascus 167 mm

Universal Japanese kitchen knife with a sharp VG-10 steel core, a 67-layer Damascus blade and a traditional octagonal Pakkawood handle.

Suncraft VG-10 Black Damascus Santoku 167 mm is a universal Japanese kitchen knife for everyday cutting of vegetables, fruit, boneless meat, fish and fresh herbs. Its compact length and wide blade provide precise guidance, good control and plenty of clearance for the fingers above the cutting board.

The cutting core made from proven Japanese stainless VG-10 steel is protected by 66 outer layers of stainless Damascus steels. The blade therefore consists of 67 layers in total. A core hardness of approximately 62 ± 1 HRC supports long-lasting retention of a fine and extremely sharp edge.

The dark Black Damascus pattern gives every blade an original appearance. The octagonal handle made from laminated Pakkawood is complemented by a contrasting white ring and is comfortable for both right- and left-handed users.

What the knife is not intended for

Do not use the Santoku for chopping bones, cutting frozen food, prying, opening packaging or twisting the blade in hard ingredients. Choose a specialised cleaver for bones and heavy butchery work.

67-layer Damascus blade with a VG-10 core

A hard cutting core made from VG-10 runs through the centre of the blade. It is surrounded on each side by 33 layers of stainless Damascus steels. Together with the core, this creates a 67-layer construction.

The cutting performance of the knife is determined primarily by the VG-10 steel in the actual edge. The outer Damascus layers protect the core, support the overall stability of the blade and create the characteristic dark Black Damascus pattern.

A hardness of approximately 62 ± 1 HRC makes it possible to create a thin and precise edge with good retention. As with other harder Japanese knives, however, the blade must be protected from impacts and lateral pressure.

Octagonal Pakkawood handle

The handle is made from Pakkawood, which is produced by bonding layers of wood and resin. Compared with untreated natural wood, it offers better resistance to normal kitchen moisture and dimensional changes.

The traditional octagonal profile provides a secure grip when holding the handle conventionally as well as when using a chef’s pinch grip across the blade transition. The symmetrical shape is suitable for right- and left-handed users. The white ring creates an elegant contrast between the dark handle and the Damascus blade.

Correct knife care

  • Wash the knife by hand only, using lukewarm water and a soft sponge.
  • Dry the blade and handle immediately after washing.
  • Never place the knife in a dishwasher.
  • Do not leave it lying in water or in a damp sink for an extended period.
  • Cut on a wooden, high-quality plastic or rubber cutting board.
  • Do not use glass, stone or ceramic cutting boards.
  • Store the knife in a block, on a suitable magnetic holder or in a blade guard.

Protect the edge from damage

Stainless steel does not mean completely maintenance-free. Residues of salt, acids and food may leave marks on the surface. Wash and thoroughly dry the knife after every use.

Sharpening VG-10 steel

For genuine edge restoration, we recommend water sharpening stones. For a normally dulled knife, begin with a grit of around JIS #1000 and then refine the edge with a JIS #3000 to #6000 stone.

Use light pressure and maintain a consistent angle while sharpening. Coarse steel honing rods and aggressive pull-through sharpeners are not ideal for the fine edge of this knife. When you have no sharpening experience, we recommend professional sharpening or one of our knife-sharpening courses.
