SUNCRAFT SENZO CLAD Slice 240 mm
Japanese slicing knife with a long three-layer AUS-10 steel blade for precise portioning of meat, fish, roasts, ham and other ingredients into clean, even slices.
SUNCRAFT SENZO CLAD Slice 240 mm is a specialised Slice/Sujihiki slicing knife. Its long, narrow blade allows you to make a smooth cut with fewer movements, helping prevent prepared meat from tearing or becoming compressed.
The knife is suitable for portioning roasted and raw boneless meat, slicing ham, poultry, fish and terrines, or preparing thin slices for carpaccio. The 240 mm edge provides sufficient working range even when portioning larger pieces.
The blade core is made from Japanese AUS-10 stainless steel, enclosed between two outer steel layers. The result is a combination of good cutting performance, toughness and practical durability for everyday use.

What is this knife not intended for?

Material and construction
The SUNCRAFT SENZO CLAD range uses a three-layer blade construction. The harder cutting core made from AUS-10 stainless steel is protected by two outer steel layers. The decorative transition between the layers creates a subtle wavy pattern near the edge.
A hardness of approximately 58 ± 1 HRC represents a practical compromise between edge retention, toughness and ease of subsequent sharpening. The knife is therefore suitable for demanding home cooks and professional use.
Brown Pakka wood is made by bonding wooden layers with resin. It withstands operational moisture better than ordinary natural wood, but the knife still does not belong in a dishwasher and should not remain soaked in water.
