Chef / Gyuto 215 mm Dellinger® Carbon Fiber Octagon is a universal Japanese-type kitchen knife designed for everyday work in home and professional kitchens. Gyuto is one of the most versatile kitchen knife types. It is suitable for cutting meat, fish, fruit, vegetables and herbs, as well as for fine slicing and precise trimming of ingredients.
The name Gyuto literally means “beef sword” or “meat cutter”, but in modern kitchens this knife type is used far more universally. Thanks to its 215 mm blade, well-guided edge and higher positioned tip, the knife handles long draw cuts, precise slicing and rocking cuts of herbs, nuts or vegetables.

Damascus steel blade with the hypnotic Ice Hypnosis pattern
The blades of knives from the Dellinger® Carbon Fiber Octagon series have a cutting core made of 10Cr15CoMoV steel, which is an equivalent of Japanese VG-10 . This steel is valued for its high hardness, excellent sharpness, good corrosion resistance and easier maintenance.
The cutting core reaches a hardness of approximately 61 ± 1 HRC and is placed between 66 layers of two stainless steels with different hardness levels. This layering ensures toughness, stability and blade durability. The unique Damascus pattern Ice Hypnosis creates a strong visual effect and helps reduce friction during cutting and the sticking of ingredients to the blade.
Long-lasting sharpness can be restored by sharpening on water stones . The knife is intended for precise cutting, not for chopping bones, frozen foods or very hard ingredients.
