Product detailed description

Premium Japanese-type chef’s knife with a Damascus blade, 10Cr15CoMoV steel core, hardness of 61 ± 1 HRC and a light octagonal handle made of carbon fiber and G10. Ideal for cutting meat, fish, fruit, vegetables, herbs and for rocking cuts.

Chef / Gyuto kitchen knife 215 mm Dellinger® Carbon Fiber Octagon

Chef / Gyuto 215 mm Dellinger® Carbon Fiber Octagon is a universal Japanese-type kitchen knife designed for everyday work in home and professional kitchens. Gyuto is one of the most versatile kitchen knife types. It is suitable for cutting meat, fish, fruit, vegetables and herbs, as well as for fine slicing and precise trimming of ingredients.

The name Gyuto literally means “beef sword” or “meat cutter”, but in modern kitchens this knife type is used far more universally. Thanks to its 215 mm blade, well-guided edge and higher positioned tip, the knife handles long draw cuts, precise slicing and rocking cuts of herbs, nuts or vegetables.

The Dellinger® Carbon Fiber Octagon series combines modern technical materials, a Damascus blade and elegant Japanese ergonomics. Knives from this series are visually striking, light and, thanks to the octagonal handle, fit comfortably in the hands of both right- and left-handed users.

Benefits of using a Gyuto knife

Dellinger information Maximum versatility

Gyuto is a versatile knife for meat, fish, vegetables, fruit and herbs. In the kitchen, it can replace most common kitchen knives.

Dellinger information Suitable for multiple cutting techniques

The blade allows draw cuts, slicing, fine trimming of ingredients, cutting into strips and rocking cuts of herbs and vegetables.

Dellinger information Light octagonal handle

The octagonal handle made of carbon fiber and G10 sits well in the hand, provides a secure grip and is suitable for right- and left-handed users.

Dellinger information Professional and home use

The knife will be appreciated by professional chefs and demanding home users who want one reliable knife for most everyday tasks.

Damascus steel blade with the hypnotic Ice Hypnosis pattern

The blades of knives from the Dellinger® Carbon Fiber Octagon series have a cutting core made of 10Cr15CoMoV steel, which is an equivalent of Japanese VG-10 . This steel is valued for its high hardness, excellent sharpness, good corrosion resistance and easier maintenance.

The cutting core reaches a hardness of approximately 61 ± 1 HRC and is placed between 66 layers of two stainless steels with different hardness levels. This layering ensures toughness, stability and blade durability. The unique Damascus pattern Ice Hypnosis creates a strong visual effect and helps reduce friction during cutting and the sticking of ingredients to the blade.

Long-lasting sharpness can be restored by sharpening on water stones . The knife is intended for precise cutting, not for chopping bones, frozen foods or very hard ingredients.

Ergonomic carbon fiber and G10 handle

The traditional octagonal handle provides a safe and comfortable grip even during longer work. Most of the handle is made of carbon fiber set in resin, while the part near the blade is made of black G10. G10 is a composite material with high resistance to moisture, temperature changes and mechanical wear.

Thanks to the low weight, strength and stability of the materials, the handle is pleasant to hold and requires no special maintenance. The octagonal shape also helps guide the blade precisely and is suitable for both right- and left-handed users.

Appearance inspired by space

The dark carbon handle evokes the endless universe and, combined with the Damascus blade, creates a unique kitchen tool. Thanks to good balance, it minimizes hand fatigue and provides a high level of control over every cut.

Luxury packaging – an ideal gift

Each knife is carefully placed in an elegant wooden gift box, which emphasizes its premium character. The combination of top-quality workmanship, exclusive materials and precise presentation makes this series a suitable gift for every lover of quality kitchen knives.

Cleaning the kitchen knife

Particles of aggressive substances attached to the blade surface may begin to corrode and create stains that may look like rust. In such cases, it is usually not the blade itself that is rusting, but the attached dirt. To remove it, you can use baking soda mixed with a little water into a fine paste and an old cork.
