Exceptional steel, distinctive DLC coating and Japanese elegance
The Dellinger Diamond 49 Layers ZDP-189 DLC series is designed for chefs and knife enthusiasts seeking a combination of advanced powder steel, precise blade geometry and distinctive design.
At the heart of every blade is a cutting core made from ZDP-189 powder steel. This core is part of a 49-layer Damascus steel construction, creating the blade's characteristic pattern. A dark DLC coating completes the blade, giving the knife a technical yet elegant appearance.
The design is completed by an octagonal Japanese Wa handle made from ebony wood with a black-and-gold Urushi lacquer finish, emphasising the premium character of the entire series.

ZDP-189 powder steel – the cutting heart of the entire series
A knife's actual cutting performance is not determined solely by the number of Damascus layers. The most important factors are the cutting core, heat treatment, blade geometry and the quality of the final cutting edge.
In this series, the cutting edge itself is formed by ZDP-189 powder steel, known for its ability to achieve an exceptionally fine cutting edge and maintain cutting performance over time.
The individual knives also undergo vacuum heat treatment followed by deep freezing, helping to stabilise the resulting steel structure.
DLC – a dark technical blade coating
The blade features a DLC – Diamond-Like Carbon coating. This thin carbon-based layer is characterised by high hardness and increased resistance to normal surface wear.
DLC also creates a distinctive dark appearance and a striking contrast between the Damascus blade and the black-and-gold handle. However, the coating does not replace proper knife care.
Octagonal Wa handle with Urushi lacquer finish
The knives feature a Japanese Wa handle made from ebony wood with an eight-sided, octagonal profile. Its symmetrical shape is suitable for both right- and left-handed users and makes it easier to maintain the correct blade orientation.
The handle features a distinctive multilayer black-and-gold Urushi lacquer finish, creating a decorative pattern inspired by Japanese aesthetics while also helping to protect the wood surface.
The term Urushi is used here to describe the style of the Japanese lacquer finish on the handle; it does not constitute a claim that certified genuine natural Urushi lacquer has been used.

How to care for ZDP-189 DLC knives
Wash the knife by hand and dry it thoroughly immediately afterwards. Dishwashers may damage the cutting edge, DLC coating, lacquered handle and its joints.
The fine cutting edge made from hard powder steel is not intended for chopping bones, cutting frozen ingredients, prying or twisting during a cut.
Use a wooden or high-quality synthetic cutting board. Avoid glass, stone and ceramic surfaces.
Sharpening hard powder steel
ZDP-189 is a technically demanding powder steel. For routine edge maintenance, we recommend high-quality water or diamond sharpening stones . If you are unsure about the correct technique, we recommend leaving sharpening to an experienced professional.
