Small Santoku Suncraft VG-10 Black Damascus 143 mm

Lightweight and precisely controllable Japanese knife with a VG-10 steel core, a dark Damascus blade and a traditional octagonal Pakkawood handle.

Suncraft VG-10 Black Damascus Santoku 143 mm is a compact universal kitchen knife for precise cutting of vegetables, fruit, herbs, fish and smaller portions of boneless meat. The shorter blade is easy to control, does not strain the hand and provides excellent control during finer work.

The cutting core made from proven Japanese stainless VG-10 steel is enclosed between 66 layers of stainless Damascus steels. The resulting 67-layer blade combines very good cutting performance, long-lasting edge retention and the distinctive Black Damascus pattern.

At the heart of the blade is a hard cutting core made from VG-10, one of the best-known Japanese stainless knife steels. The steel is popular for its ability to take a very sharp grind, retain the edge for a long time and withstand normal kitchen moisture well.

The core is protected by 66 layers of two stainless Damascus steels. Together with the cutting core, this creates a 67-layer construction. The outer layers support the stability of the blade and form the dark, flowing Black Damascus surface.

The cutting core hardness of approximately 62 ± 1 HRC makes it possible to create a fine edge with long-lasting retention. The high hardness, however, requires the use of a suitable cutting board and protection against lateral stress on the blade.

Octagonal Pakkawood handle

The traditional Japanese-style handle is made from Pakkawood, which combines laminated wood with resin. The result is a pleasant wood-like surface with increased resistance to normal kitchen moisture.

The octagonal profile rests comfortably against the fingers during use and provides a secure sense of the knife’s orientation in the hand. The symmetrical shape is suitable for right- and left-handed users. An elegant white ring separates the dark handle from the blade and emphasises the Japanese character of the knife.

How should the knife be cared for correctly?

  • Wash the knife by hand only, using lukewarm water and a soft sponge.
  • Dry the blade and handle thoroughly immediately after washing.
  • Never place the knife in a dishwasher.
  • Do not leave it lying in water or in a damp sink for an extended period.
  • Cut on a wooden, rubber or high-quality plastic cutting board.
  • Do not use glass, stone, ceramic or metal work surfaces.
  • Store the knife in a block, on a magnetic holder or in a protective sheath.

Stainless does not mean maintenance-free

Residues of salt, acids and food can create stains on the surface or cause corrosion of attached metal particles. Always clean and dry the knife after use.

How should VG-10 steel be sharpened?

To restore the edge, we recommend high-quality water sharpening stones. For routine sharpening, begin with a stone around JIS #1000 and then finish the edge with a grit of approximately JIS #3000 to #6000.

Use light pressure and maintain a consistent angle while sharpening. Coarse steel honing rods and aggressive pull-through sharpeners are not ideal for the fine edge of this knife.
