Details you will appreciate every day

Precise control

The short blade is easy to guide for delicate preparation.

VG-10 steel

Japanese stainless steel hardened to 60 ± 1 HRC provides a fine edge and good edge retention with proper care.

Damascus and Tsuchime

33 layers including the core, finished with a distinctive hammered texture.

Where does a utility knife excel?

A utility knife bridges the gap between a small paring knife and a larger chef’s knife.

  • Fruit and vegetables: cut strawberries, radishes, green beans, citrus fruit and other small ingredients.
  • Meat preparation: trim small boneless cuts and make openings for larding.
  • Cold dishes: prepare sandwiches and small garnishes.
  • Everyday cooking: enjoy greater control for smaller kitchen tasks.
Dellinger tip

If you already own a Santoku or Gyuto, this 120 mm utility knife makes a useful companion. Reach for the larger knife for bulky ingredients and for the utility knife when precision matters.

Japanese steel and the characteristic Tsuchime finish

The VG-10 cutting core is surrounded by 32 layers of Damascus steel, 16 on each side, giving a total of 33 layers including the core. The hammered Tsuchime surface adds character and may slightly reduce the adhesion of certain foods. The Western-style Pakkawood handle complements the blade.
