Product detailed description
Santoku Kitchen Knife 150 mm Dellinger Essence "Dámička" No. 13
A lightweight and compact Santoku for comfortable cutting of vegetables, herbs and meat. Ideal for smaller hands or anyone who prefers a more agile kitchen knife.
Dámička – a Lighter Santoku for Precise Everyday Work
Dellinger Essence "Dámička" No. 13 is the thirteenth knife in the Dellinger Essence series. This compact Santoku kitchen knife features a 150 mm blade, combining versatile use with low weight and excellent handling.
Chef Jan Punčochář collaborated on the development of the Dellinger Essence series. Dámička was created as a lighter and smaller alternative to larger chef's knives – for users who prefer a shorter blade, lower weight and a slimmer handle.
The typical Santoku shape features a taller, wider blade that is easy to control when cutting vegetables, chopping herbs or portioning meat. Its wider profile also makes it convenient to pick up chopped ingredients and transfer them from the cutting board.
Weighing approximately 120 g, the knife feels light and agile. The shorter 150 mm blade is suitable for smaller workspaces, smaller hands and anyone who does not feel comfortable using a larger 180–210 mm chef's knife.
Knives from the Dellinger Essence series are suitable for both right-handed and left-handed users. The ergonomically shaped synthetic Pakkawood handle provides a comfortable, secure grip during everyday cooking.

German 1.4116 Steel – Reliable for Everyday Use
The blade is made from German 1.4116 stainless steel with a hardness of approximately 56–58 HRC. This steel offers a good balance of sharpness, toughness, corrosion resistance and ease of resharpening.
Each knife is hand-sharpened and inspected before dispatch to ensure it is ready for immediate use and meets the standards of the Dellinger Essence series.

Knife Care and Washing
We recommend washing kitchen knives by hand only in warm water with a mild detergent and drying them thoroughly immediately afterwards. Never put the knife in a dishwasher. High temperatures, harsh detergents and contact with other dishes may damage the cutting edge, blade surface and handle, and significantly accelerate dulling. To preserve the knife's long service life, maximum sharpness and attractive appearance, hand washing followed by immediate drying is the gentlest and recommended maintenance method.

Sharpening Your Kitchen Knife
For sharpening, we recommend high-quality water or diamond sharpening stones. If you are unsure about the correct technique, you can contact us directly or attend one of our knife sharpening courses .
Proper sharpening helps maintain the cutting edge geometry and extends the knife's service life. Incorrect sharpening with unsuitable tools can damage the edge.

Choose Suitable Sharpening Tools
Sharpening Stone (Whetstone) – the recommended choice for precise sharpening of a 1.4116 steel knife. For regular edge restoration, a grit of approximately 1000 grit is suitable, while approximately 3000–6000 grit is recommended for finer finishing and smoothing of the edge.
Honing Steel – suitable for regular edge maintenance between sharpening sessions.
Pull-Through Sharpener – a quick and simple option for regular home maintenance.
Blade Cleaning and Care
After use, wash the knife by hand as soon as possible, dry it thoroughly and store it so that the cutting edge does not come into contact with other metal objects. Especially after working with acidic or more aggressive ingredients, do not leave food residues on the blade for an unnecessarily long time.
