Product detailed description
Flexi Filleting Knife 205 mm Dellinger Essence „Vohejbák“ No. 12
A thin, flexible filleting knife for preparing fish, removing skin and membranes, and performing precise trimming work on meat.
Vohejbák – a Flexible Blade That Adapts to the Ingredient
Dellinger Essence „Vohejbák“ No. 12 is the twelfth knife in the Dellinger Essence series and the only model in the range with a highly flexible blade. It was developed as a specialised knife for tasks requiring the blade to follow the shape of the ingredient.
Chef Jan Punčochář collaborated on the development of the series, seeking a knife particularly suited to preparing fish and removing membranes from meat. The result is a thin, flexible blade measuring 205 mm, allowing precise and controlled cuts.
The blade curves slightly towards the tip, helping with the initial cut and longer slicing strokes. Vohejbák is ideal for filleting salmon, removing fish skin, trimming meat and removing membranes.
The blade's flexibility allows it to follow the contours of a fish fillet or a piece of meat, helping to minimise unnecessary waste. Weighing approximately 160 g, the knife is easy to handle even during delicate work.
Knives from the Dellinger Essence series are suitable for both right-handed and left-handed users. The ergonomically shaped synthetic Pakkawood handle provides a secure and comfortable grip, even when working with a flexible blade.

German 1.4116 Steel – Durable and Easy to Maintain
The blade is made from German 1.4116 stainless steel with a hardness of approximately 56–58 HRC. This steel offers a good balance of corrosion resistance, toughness and easy maintenance.
Each knife is hand-sharpened and inspected before dispatch to ensure it is ready for immediate use and meets the standards of the Dellinger Essence series.

What Is Vohejbák Best Suited For?
| Use | Why It Works Well | Practical Benefit |
|---|---|---|
| Filleting Fish | The flexible blade follows the shape of the fish, allowing precise control of the cut. | Cleaner fillets with less waste. |
| Removing Skin | The thin blade glides easily between the skin and the flesh. | More precise separation of the skin from the fillet. |
| Removing Membranes | Flexibility helps the blade follow the surface of the meat. | Less waste during trimming. |
| Delicate Portioning | The thin blade provides excellent control for detailed cuts. | More precise work with both fish and meat. |
Flexibility, Yes – Prying, No
The Vohejbák blade is intentionally flexible for filleting and cutting along the contours of ingredients. However, do not use the knife as a lever or force the blade to bend beyond its natural range of flexibility.
Ergonomic Pakkawood Handle
The handle is made from synthetic wood PAKKA WOOD . This material combines the attractive appearance of wood with increased resistance to moisture and environmental changes.
The brown, textured handle is hand-polished and ergonomically shaped. With a filleting knife, a secure grip is particularly important when guiding the thin, flexible blade along fish or meat.
Knife Care and Washing
We recommend washing kitchen knives by hand only in warm water with a mild detergent and drying them thoroughly immediately after washing. Never put the knife in a dishwasher. High temperatures, harsh detergents and contact with other dishes may damage the cutting edge, blade surface and handle, and significantly accelerate dulling.

Knife Handling Rules
Never wash the knife in a dishwasher.
After use, wash the knife by hand and dry it thoroughly immediately.
Use the flexible blade only within its natural range of movement and never force it to bend excessively.
Do not use the knife as a lever, screwdriver or substitute for other tools.
Protect the knife from drops, impacts and contact with very hard surfaces.
Sharpening Your Filleting Knife
For sharpening, we recommend high-quality water or diamond sharpening stones. With a thin, flexible blade, it is important to avoid excessive pressure and preserve the original cutting edge geometry.
If you are unsure about the correct technique, you can contact us directly or attend one of our knife sharpening courses .

Choose Suitable Sharpening Tools
Sharpening Stone (Whetstone) – a suitable choice for precisely restoring the cutting edge. For regular sharpening, a grit of approximately 1000 grit can be used, with approximately 3000–6000 grit for finer finishing.
Honing Steel – can help maintain the edge between sharpening sessions, but with a thin, flexible blade it is important to work carefully and without unnecessary pressure.
Blade Cleaning and Care
After use, wash the knife by hand as soon as possible and dry it thoroughly. Especially after working with fish or meat, do not leave food residues on the blade for an unnecessarily long time, and store the knife so that its cutting edge does not come into contact with other metal objects.
Dellinger Quality and Inspection
