Product detailed description

Utility Knife Petty 100 mm Dellinger Essence „Šikula“ No. 03

A small, lightweight and exceptionally agile kitchen knife for peeling, trimming, cutting smaller ingredients and precise work in the hand.

Šikula – a Small Knife You'll Always Keep Close at Hand

Dellinger Essence „Šikula“ No. 03 is the third knife in the Dellinger Essence series and is based on the Japanese Petty Knife (ペティナイフ) design. A Petty is a smaller, versatile kitchen knife that complements larger knives such as Gyuto or Santoku.

The 100 mm blade provides excellent control during delicate and detailed work. Šikula is ideal for peeling fruit and vegetables, removing stems and blemishes, trimming ingredients, making small cuts, decorating and other tasks where a large chef's knife would be unnecessarily bulky.

Weighing approximately 85 g, the knife is lightweight and easy to handle. Its compact dimensions allow comfortable work not only on a cutting board but also directly in the hand when peeling or trimming smaller ingredients.

Knives in the Dellinger Essence series are suitable for both right-handed and left-handed users. The ergonomically shaped synthetic Pakkawood handle provides a comfortable and secure grip during everyday use.

German 1.4116 Steel – Durable and Easy to Maintain

The blade is made from German 1.4116 stainless steel with a hardness of approximately 56–58 HRC. This steel offers a good balance of sharpness, toughness, corrosion resistance and ease of resharpening.

Each knife is sharpened by hand and inspected before dispatch to ensure that it is ready for immediate use and meets the standards of the Dellinger Essence series.

Knife Care and Washing

High temperatures, harsh detergents and contact with other dishes can damage the cutting edge, blade surface and handle, and significantly accelerate dulling.

Sharpening Dellinger kitchen knives

Choose the Right Sharpening Tools

Sharpening stone (whetstone) – the recommended choice for precise sharpening of a knife made from 1.4116 steel. A grit of approximately 1000 grit is suitable for routine edge restoration, while approximately 3000–6000 grit is suitable for finer finishing and smoothing the cutting edge.

Honing steel – suitable for regular maintenance of the cutting edge between sharpening sessions.

Pull-through sharpener – a quick and simple option for regular maintenance at home.

Cleaning and Blade Care

After use, wash the knife by hand as soon as possible, dry it thoroughly and store it so that the cutting edge does not come into contact with other metal objects. Especially after working with acidic or more aggressive foods, do not leave food residue on the blade for unnecessarily long periods.
