Product detailed description

Slicing Knife Slice 240 mm Dellinger Essence „Dlouhán“ No. 11

A long and surprisingly versatile kitchen knife for cleanly slicing meat, ham and steaks, as well as precision work with vegetables and other ingredients.

Dlouhán – One of Jan Punčochář's Favourites

Dellinger Essence „Dlouhán“ No. 11 is the eleventh knife in the Dellinger Essence series and one of the most distinctive models in the entire range. Thanks to its long 240 mm blade, it offers excellent reach, smooth cutting and a surprisingly wide range of applications.

Chef Jan Punčochář collaborated on the development of the Dellinger Essence series, and Dlouhán is one of his favourite knives from the collection. Its long blade is excellent for cutting thin slices of meat, Parma ham, roast beef and steaks. Thanks to its good manoeuvrability, it can also handle shallots, vegetables and other everyday kitchen tasks.

The long blade allows you to make a smoother cut in one pulling motion, reducing the need for repeated sawing movements. The result is cleaner slices, less damage to the texture of ingredients and more precise presentation when serving.

Although the 240 mm blade may seem particularly long at first glance, its extended reach is one of the knife's main advantages. After a short period of adjustment, it allows very efficient work, especially when cutting larger ingredients.

Knives from the Dellinger Essence series are suitable for both right-handed and left-handed users. The ergonomically shaped synthetic Pakkawood handle provides a secure and comfortable grip, even when working with the long blade.

The blade is made from German 1.4116 stainless steel with a hardness of approximately 56–58 HRC. This steel offers a good balance of sharpness, toughness, corrosion resistance and ease of resharpening.

Each knife is sharpened by hand and inspected before dispatch to ensure it is ready for immediate use and meets the standards of the Dellinger Essence series.

Knife Care and Washing

We recommend washing kitchen knives by hand only in warm water with a mild detergent and drying them thoroughly immediately after washing. Never put the knife in a dishwasher. High temperatures, harsh detergents and contact with other dishes can damage the cutting edge, blade surface and handle, and significantly accelerate dulling.
