Product detailed description
Paring Knife 90 mm Dellinger Essence „Loupáček“ No. 01
A small, precise kitchen knife for peeling, coring, trimming fruit and vegetables, and other delicate tasks performed directly in the hand.
Loupáček – the First Knife in the Dellinger Essence Series
Dellinger Essence „Loupáček“ No. 01 is the first knife in the Dellinger Essence series and was created based on the vision of chef Jan Punčochář. The aim was to develop a small, practical knife that fits comfortably in the hand and handles precise everyday tasks.
The 90 mm blade is particularly suitable for peeling fruit and vegetables, removing blemishes, cutting out stems, trimming ingredients and making small decorative cuts. The shorter, curved blade provides excellent control when working directly in the hand.
In Japanese terminology, a similar type of knife is known as a Kudamono Knife (果物ナイフ). The word „kudamono“ means fruit and reflects the main purpose of this type of knife – precise peeling, cutting and preparation of fruit and vegetables.
Weighing approximately 80 g, Loupáček is lightweight and highly manoeuvrable. It is suitable for both right-handed and left-handed users, while the ergonomic Pakkawood handle makes it easy to control during delicate, detailed work.

German 1.4116 Steel – Durable and Easy to Maintain
The blade is made from German 1.4116 stainless steel with a hardness of approximately 56–58 HRC. This steel offers a good balance of sharpness, toughness, corrosion resistance and ease of resharpening.
Each knife is hand-sharpened and inspected before dispatch to ensure it is ready for immediate use and meets the standards of the Dellinger Essence series.

Knife Care and Washing

High temperatures, harsh detergents and contact with other dishes can damage the cutting edge, blade surface and handle, and significantly accelerate dulling.

Sharpening Your Kitchen Knife
For sharpening, we recommend high-quality water or diamond sharpening stones. If you are unsure about the correct technique, you can contact us directly or attend one of our knife sharpening courses .
Proper sharpening helps maintain the cutting edge geometry and extends the knife's service life. Incorrect sharpening with unsuitable tools can damage the edge.

Choose Suitable Sharpening Tools
Sharpening Stone (Whetstone) – the recommended choice for precise sharpening of a 1.4116 steel knife. For regular edge restoration, a grit of approximately 1000 grit is suitable, while approximately 3000–6000 grit is recommended for finer finishing and smoothing of the edge.
Honing Steel – suitable for regular edge maintenance between sharpening sessions.
Pull-Through Sharpener – a quick and simple option for regular home maintenance.
Blade Cleaning and Care
After use, wash the knife by hand as soon as possible, dry it thoroughly and store it so that the cutting edge does not come into contact with other metal objects. Especially after working with acidic or more aggressive ingredients, do not leave food residues on the blade for an unnecessarily long time.
