From a working edge to a fine finish
The #1000 stone creates the cutting edge, #3000 smooths it and #6000 provides a fine final finish. The holder, mat and cleaning disc create a practical setup for precise and clean work.
Sharpening in three steps
1. Restoring the edge – JIS #1000
Start with the #1000 stone. This universal grit restores the cutting performance of a normally dull knife, creates a continuous cutting edge and removes minor signs of wear.
2. Refining the edge – JIS #3000
Once the edge has been correctly formed, continue with the #3000 stone. It smooths the marks left by basic sharpening and helps create a finer working edge for a clean kitchen cut.
3. Final finishing – JIS #6000
Use the #6000 stone as the final step. Smooth the cutting edge using very light strokes and minimal pressure to create a fine polishing effect.
Is it always necessary to use all three stones?
No. For routine edge restoration, #1000 followed by finishing on #3000 may be sufficient. Use the #6000 stone when you require a very finely smoothed cutting edge. However, never begin sharpening a dull knife with it.
How to use the set correctly
- Lay the non-slip mat on a flat work surface.
- Place the RISAM holder on the mat and secure the #1000 stone in it.
- Wet the surface of the stone with water. Do not use oil.
- Guide the knife evenly at a stable angle along the entire length of the blade.
- Once a continuous cutting edge has formed, move to the #3000 stone.
- For a very fine finish, complete the sharpening process on the #6000 stone.
- Gradually reduce the pressure as the grit becomes finer.
- Rinse the knife after sharpening and dry it immediately.
- Clean the stones with the Shapton 0505 disc as required.
- Allow all components to dry thoroughly and separately.
When is this set not enough?
The #1000/#3000/#6000 combination is intended primarily for normally dull knives, regular maintenance and fine edge finishing. Deeper chips, a severely neglected blade or a significant change in geometry may require a coarser sharpening stone.
For repairs and faster material removal, you can use the Shapton RockStar JIS #320 before the #1000 stone.

How to use the Shapton 0505 cleaning disc
Wet the cleaning disc with water and move it across the surface of the sharpening stone using light, even strokes. It helps remove trapped metal particles, sharpening slurry and other dirt.
The disc has one flat and one grooved working side. Both sides can be used. Do not apply excessive pressure during use, and regularly rinse both the disc and the stone with clean water.
Cleaning disc and stone flattening
The Shapton 0505 disc is suitable for routine cleaning and light maintenance of the sharpening surface. For a significantly dished stone, a larger flattening plate is more suitable for precise, full-surface levelling.
Care of the sharpening set

- Allow all components to dry separately at room temperature.
- Do not store damp stones in a closed container.
