A coarse synthetic sharpening stone made in Japan for edge repairs, rapid material removal and creating a new bevel before continuing with a finer grit.

Shapton RockStar JIS #320 is a coarse water sharpening stone intended for situations where a standard #1000 stone no longer works quickly enough. It helps restore a severely dull edge, remove minor chips and adjust the bevel geometry.

The JIS #320 grit corresponds to an abrasive particle size of approximately 40 microns. The stone therefore removes material considerably faster than basic or fine stones. It is also suitable for hard knife steels, but requires precise blade control and controlled pressure.

The dimensions of 210 × 70 × 10 mm provide a sufficiently large working surface for standard kitchen knives. After completing the repair, it is necessary to continue with at least a stone of approximately JIS #1000, which removes deeper sharpening marks and creates a usable working edge.

  4. Sharpen using controlled strokes and continuously check the amount of material being removed.
  5. After removing the damage, reduce the pressure and even out the bevel along the full length of the edge.
  6. Rinse both the knife and stone and continue with the finer #1000 grit.

Practical advice

When repairing a chip, do not sharpen only one small area. Even out the cutting edge smoothly over a longer section so that a hollow does not form in the blade and the natural edge profile is preserved.

  • Rinse the stone with clean water after sharpening.
  • Do not use oil, aggressive cleaning agents or a dishwasher.
  • Allow it to air-dry at room temperature.
  • Do not dry it on a radiator or in direct sunlight.
  • Do not store a damp stone in a closed container.
