Sharpening stones for kitchen knives

A sharpening stone lets you restore the edge bevel, sharpen an ordinarily dull knife, refine marks left by a coarser stone and create a very fine finish. The choice mainly depends on the condition of the knife, the stone grit, the abrasive material and the method of use recommended by the manufacturer.

For regular maintenance of an undamaged kitchen knife, a stone around #1000 is a practical starting point. To refine the edge after sharpening, consider a #1000/#3000 combination. Use coarser stones mainly for repairs and very dull knives.

Types of sharpening stones

Single stone, combination stone or a complete set?

Single stone

Suitable when you know exactly which grit you need or are gradually building your own sharpening setup. It offers the full working surface in one grit.

Combination stone

Two grits in one product save space and can cover basic sharpening and subsequent refinement. Use each side for its intended purpose.

Sharpening stone set

Practical for users who want several consecutive grits, or also a holder, flattening tool and other accessories. Always check the exact contents of the specific set.

Basic sharpening procedure

How do you use a sharpening stone?

1. Read the instructionsFind out whether the stone must be soaked, only moistened or used dry.
2. Secure the stoneUse a stable non-slip mat or a suitable holder.
3. Keep a consistent angleRespect the original grind and the knife manufacturer’s recommendation.
4. Sharpen the entire edgeWork evenly from the heel of the blade to the tip.
5. Remove the burrAfter creating the bevel, finish the edge with a suitable finer method.
6. Clean the knifeAfter sharpening, wash the blade, dry it thoroughly and store it safely.

Caring for a sharpening stone

Check flatness.
A hollow in the working surface makes it harder to maintain correct edge geometry. Flatten the stone with a suitable tool as needed.

Clean it according to the manufacturer’s instructions.
After sharpening, remove slurry and metal particles using a method suitable for the specific material.

Allow the stone to dry correctly.
If required by the manufacturer, let it dry naturally and evenly away from direct heat.

Protect it from impacts and frost.
Sharpening stones can be fragile. Do not expose wet stones to frost or store them in a way that prevents safe drying.

Sharpening safety

The stone must rest securely on a flat work surface. Keep your fingers above the level of the edge and make slow, controlled movements. If the stone or mat moves, stop sharpening and secure it.

Do not test sharpness by running your finger along the edge. Use a safe paper or food test and guide the blade away from your body.

Which sharpening stone should I choose first?
