Bread 215 mm Dellinger® Carbon Fiber Octagon is a specialized kitchen knife with a long serrated blade designed for clean bread slicing without unnecessary crumbling, crushing or tearing of the crumb. Thanks to the 215 mm blade length, it comfortably handles fresh bread, baguettes, harder rolls, sandwich bread, bundt cakes and larger pastry products.
The serrated edge is ideal for foods with a firmer or crispy surface and soft interior. The knife therefore works well not only with bread and pastries, but also with cakes, pies, melon, pineapple or larger tomatoes. The cut is smooth and gentle, helping preserve the shape and structure of the sliced ingredient.

Damascus steel blade with serrated edge
The cutting edge of knives from the Dellinger® Carbon Fiber Octagon series has a cutting core made of 10Cr15CoMoV steel, equivalent to Japanese VG-10. This steel is popular for high hardness, excellent sharpness, good corrosion resistance and easier maintenance.
The cutting core reaches approximately 61 ± 1 HRC and is placed between 66 layers of stainless steels with different hardness levels. This layering provides toughness, stability and blade durability. The Damascus pattern Ice Hypnosis emphasizes the premium appearance of the knife and sets it apart from ordinary bread knives.
The serrated edge is designed mainly for bread and foods with a firmer surface. Do not use the knife for chopping bones, frozen foods or very hard ingredients. If the edge needs restoring, we recommend professional sharpening because a serrated edge requires a different method than a classic smooth blade.
