Santoku kitchen knife 185 mm Dellinger® Carbon Fiber Octagon

Santoku 185 mm Dellinger® Carbon Fiber Octagon is a versatile Japanese-type kitchen knife and one of the most popular knives for everyday cooking. The name Santoku is often translated as “three virtues” and refers to universal use when preparing vegetables, meat and fish.

The 185 mm blade offers an excellent balance between precision, stability and versatility. The wider blade profile helps when cutting vegetables, transferring chopped ingredients from the board and controlled work with meat, fish, fruit, herbs or mushrooms. Santoku is a great alternative to a classic Western chef’s knife.

The Dellinger® Carbon Fiber Octagon series combines modern technical materials, a Damascus blade and elegant Japanese ergonomics. Knives from this series are visually striking, light and fit both right- and left-handed users very well.

Benefits of using a Santoku knife

Dellinger information Three virtues in one knife

Santoku is a universal knife for vegetables, meat and fish. It is suitable for cutting, slicing, portioning and fast preparation of most everyday ingredients.

Dellinger information Wide and easy-to-control blade

The 51 mm blade height provides stability when cutting and makes it easier to transfer chopped ingredients from the board to a pan, pot or bowl.

Dellinger information Light octagonal handle

The octagonal handle made of carbon fiber and G10 sits well in the hand, provides a secure grip and is suitable for right- and left-handed users.

Dellinger information Great alternative to Gyuto

Santoku is an excellent choice for those who want a shorter and wider universal knife than a classic chef’s knife or Gyuto.

Damascus steel blade with the hypnotic Ice Hypnosis pattern

The cutting edge of knives from the Dellinger® Carbon Fiber Octagon series has a cutting core made of 10Cr15CoMoV steel, equivalent to Japanese VG-10. This steel is popular for high hardness, excellent sharpness, good corrosion resistance and easier maintenance.

The cutting core reaches approximately 61 ± 1 HRC and is placed between 66 layers of stainless steels with different hardness levels. This layering provides toughness, stability and blade durability. The unique Damascus pattern Ice Hypnosis creates a strong visual effect and helps reduce friction and ingredient sticking.

Long-lasting sharpness can be restored by sharpening on water stones. The knife is intended for precise cutting, not for chopping bones, frozen foods or very hard ingredients.

Ergonomic carbon fiber and G10 handle

The traditional octagonal handle provides a safe and comfortable grip even during longer work. Most of the handle consists of carbon fiber set in resin, while the section near the blade is made of black G10. G10 is a composite material with high resistance to moisture, temperature changes and mechanical wear.

Thanks to the low weight, strength and stability of the materials, the handle is pleasant to hold and requires no special maintenance. The octagonal shape also helps guide the blade precisely and is suitable for right- and left-handed users.

Appearance inspired by space

The dark carbon handle evokes the endless universe and, together with the Damascus blade, creates a unique kitchen tool. Good balance minimizes hand fatigue and provides high control over every cut.

Luxury packaging – an ideal gift

Each knife is carefully stored in an elegant wooden gift box, which emphasizes its premium character. The combination of top-quality workmanship, exclusive materials and precise presentation makes this series a suitable gift for every lover of quality kitchen knives.

Particles of aggressive substances attached to the blade surface may corrode and create stains that look like rust. To remove them, you can use baking soda mixed with a little water into a fine paste and an old cork.
