Damascus steel blade with the hypnotic Ice Hypnosis pattern
The cutting edge of knives from the Dellinger® Carbon Fiber Octagon series has a cutting core made of 10Cr15CoMoV steel, equivalent to Japanese VG-10. This steel is popular for high hardness, excellent sharpness, good corrosion resistance and easier maintenance.
The cutting core reaches approximately 61 ± 1 HRC and is placed between 66 layers of stainless steels with different hardness levels. This layering provides toughness, stability and blade durability. The unique Damascus pattern Ice Hypnosis creates a strong visual effect and helps reduce friction and ingredient sticking.
Long-lasting sharpness can be restored by sharpening on water stones. The knife is intended for precise cutting, not for chopping bones, frozen foods or very hard ingredients.
