Working butcher slicing knife with a 180 mm stainless 4Cr13MoV blade, 56–58 HRC hardness, 2.0 mm blade thickness and ergonomic PP + TPE handle. Suitable for precise slicing of meat, roasts, ham, smoked meat, roast beef, poultry and sausages into thin clean slices.

Blade from stainless 4Cr13MoV steel

The blade is made from stainless 4Cr13MoV steel. This practical working steel is popular in butcher knives thanks to good moisture resistance, toughness and easy sharpening.

The edge hardness is approximately 56–58 HRC, giving the knife a practical balance between edge retention, toughness and quick maintenance.

The 2.0 mm thick, narrow 180 mm blade is intended for slicing meat and draw cuts. It is not intended for chopping bones, levering or cutting frozen foods.
