Blade from stainless 4Cr13MoV steel
The blade is made from stainless 4Cr13MoV steel, a practical monosteel for butcher and gastro use.
The edge hardness is approximately 56–58 HRC. This makes the knife tough, practical and easy to keep sharp.
The long 220 mm blade is designed for smooth draw cuts. It is not a cleaver and should not be used for bones, frozen foods or as a lever.
