Paring knife 75 mm Dellinger® Longevity Damascus Edition is a small paring knife designed for precise work where maximum control over the blade is essential. Thanks to the short blade, pointed profile and compact dimensions, it is excellent for peeling, coring, trimming, decorating and fine kitchen preparation.
The 75 mm blade is ideal for fruit, vegetables, herbs, garlic, onion, strawberries, citrus, smaller mushrooms and other small ingredients. The knife is easy to control when working in the hand, such as peeling an apple, removing cores, trimming eyes from vegetables or finishing ingredients before serving.

Damascus steel blade with STORMY WAVES pattern
The cutting core is made of 10Cr15CoMoV steel, equivalent to Japanese VG-10. This steel is popular for high hardness, excellent sharpness, corrosion resistance and easier maintenance.
The cutting core reaches approximately 61 ± 1 HRC and is placed between 66 layers of stainless steels. The Damascus pattern STORMY WAVES evokes a stormy sea and gives each knife a unique appearance.
The knife is intended for precise peeling, trimming and detailed kitchen work. Do not use it for chopping bones, frozen foods, very hard ingredients or as a lever. Long-lasting sharpness can be restored by sharpening on water stones.
