All-Purpose Chef's Knife Kiritsuke Chef 205 mm
A versatile chef's knife for meat, fish, vegetables, fruit, slicing and precise detail work. The distinctive angled Kiritsuke tip gives the knife precision and a unique appearance.
Dellinger Okami Kiritsuke Chef 205 mm combines the versatility of a classic chef's knife with the distinctive Kiritsuke profile. It is suitable for everyday cutting, portioning, slicing and more precise work with the blade tip.
It belongs to the Dellinger Okami 3-Layers AUS10 series and combines Japanese AUS-10 steel, a matte stonewashed finish and a durable, rounded G10 handle.
Versatile Length
Long enough for larger ingredients while providing good control for more precise tasks.
Precision Tip
The angled tip profile makes detailed cuts and precise work easier.
Japanese Steel
AUS-10 offers a combination of sharpness, toughness and good edge retention.
Chef and Kiritsuke in One Knife
Use this knife for portioning meat, cutting fish, slicing and preparing vegetables and fruit. The angled tip is suitable for more precise detail work, while the blade profile also allows smooth rocking cuts when chopping herbs or nuts.
AUS-10, Three-Layer Construction and Stonewashed Finish
The cutting core of the blade is made from Japanese AUS-10 steel with a hardness of 58–62 HRC, sandwiched between two layers of stainless steel. The three-layer construction combines the ability to achieve a sharp cutting edge with the toughness needed for everyday use.
The distinctive stonewashed finish creates a matte appearance and helps visually conceal minor marks caused by normal use. The cutting edge is sharpened at an angle of approximately 15°.

Comfortable Rounded G10 Handle
The handle is made from durable G10 material and features a decorative mosaic rivet with a samurai emblem. Its rounded profile supports a comfortable grip, good control and precise blade handling.
G10 is suitable for kitchen environments thanks to its moisture resistance and easy maintenance.

Recommendations and Knife Care
Never wash the knife in a dishwasher. Wash it by hand after use and dry it immediately.
Do not use the knife as a lever, do not bend it and do not cut hard or frozen foods.
Protect the knife from drops and impacts, and store it safely out of children's reach.
Important
To preserve sharpness, we recommend using a wooden or high-quality synthetic cutting board. Avoid glass, ceramic and other very hard surfaces.
Sharpening Your Kitchen Knife
To restore the cutting edge, we recommend diamond or water sharpening stones . Start with a grit of approximately 1000, followed by finer finishing on a 3000–6000 grit stone.
If you are unsure about sharpening, use a professional sharpening service or attend one of our knife sharpening courses .

Cleaning the Blade
After working with acidic, salty or otherwise aggressive ingredients, rinse the blade and dry it thoroughly. Deposits or foreign particles on the surface may, over time, cause marks resembling corrosion.
